Award-winning Scottish chef Dean Banks has launched an exciting new chapter for one of Edinburgh’s most iconic dining destinations. 1925 at Pompadour, which opened on Wednesday 23 July in the Caledonian Hotel on Princes Street, marks a bold departure from Banks’ previous tasting menu format. Instead, the new restaurant offers an elegant yet accessible à la carte menu, placing flavour, creativity, and premium Scottish ingredients front and centre.
Set within the grand surrounds of the historic Pompadour dining room – with sweeping views of Edinburgh Castle – the reimagined space combines timeless luxury with a modern culinary approach. The restaurant’s name pays tribute to the year the original Pompadour opened its doors, while its updated concept reflects changing dining habits and a desire for more flexibility.

The menu is packed with seasonal Scottish produce and features standout dishes like Dean’s signature lobster thermidor, Orkney hand-dived scallops with vadouvan carrot, and champagne-baked market fish. For those craving something from the land, options include corn-fed chicken with king oyster mushrooms and madeira sauce, as well as a rich smoked ricotta and egg yolk raviolo, served with leeks and lemon butter.
With starters from £15, mains from £26, and a three-course lunch for just £39.50, 1925 at Pompadour is designed to be approachable without compromising on quality. To celebrate the opening, diners can enjoy an exclusive 50% off food from 23–30 July – a perfect opportunity to sample the menu at exceptional value.
Speaking about the launch, Dean Banks said:
“Consumers are moving away from multi-course tasting menus, instead preferring restaurants where they can enjoy premium dishes at an accessible price point. 1925 at Pompadour brings this together beautifully, all under the iconic setting of Edinburgh Castle.”
For those seeking a memorable dining experience in the heart of the city, 1925 at Pompadour offers a fresh, refined option rooted in Scottish provenance and hospitality.
