EDINBURGH GETS A TASTE OF MONTREAL WITH CITY’S FIRST TRADITIONAL BAGEL SHOP
Bross Bagels; Edinburgh’s first traditional bagel shop will open their doors on August 1st. Located on Portobello High Street, the new venue will introduce Edinburgh residents to authentic, quality bagels inspired by a traditional recipe from Montreal – known as the bagel capital of the world.
The new café and deli will present a range of bagels, perfectly packed to take away by the dozen, or available to buy filled – married with fresh, lovingly hand crafted New York style deli inspired fillings. The Bross Bagels menu will be available to take away or sit in and includes a range of specials with favourites including bagel, lox & cream cheese as well as a vegan bagel filled with smashed avocado, tomatoes, chilli oil & rock salt.
Owner and proprietor Larah Bross was inspired to open the shop after spending 11 years living in Edinburgh, struggling to find the authentic Canadian bagels she grew up with in her home town of Montreal. Together with her business partner Marc Millar, the duo have worked in collaboration with local community business Breadshare, to craft the perfect bagel recipe that stays true to the traditional bread, as well as a shared ethos for using organic,
local and distinctive ingredients. Rustic, fresh and light, the bagels will come in a range of varieties including plain, sesame seed, poppy seed, wholemeal and vegan.
The team at Bross Bagels have worked closely with a number of local suppliers and ingredients including Pastrami & salt beef from Highland Wagyu, as well as smoked fish from Welch’s fishmongers. Bross Bagels will also serve their own unique blend of freshly ground coffee, created exclusively by local roasters Howdah in North Berwick.
Owner Larah Bross explains; “I grew up with authentic Canadian bagels – it was a staple for breakfast, brunch and lunch. Back home, bagels are as much of a culture as coffee, and people travel for miles to get their bagel supply – buying bagels and taking them home to enjoy with a big brunch feast is an occasion in itself.
“I’ve spent years yearning to find the bagels I grew up enjoying at home. For me, nothing beats the comfort and pleasure of eating warm, rustic freshly baked bagels. Authentic bagels are boiled before they are baked, which is a step often skipped in the bagels you’ll find in supermarkets. It’s been no easy task, but I believe that together with Breadshare, we’ve finally found the recipe for the perfect bagel. I want more people in Edinburgh to experience the flavour of authentic bagels, and to let them understand the absolute joy of that first bite!”
With an industrial inspired interior and a commitment to fully sustainable and recyclable materials, Bross Bagels will have 8 seats for customers to sit in and enjoy their fresh bagels and freshly ground coffee.
